Because Sherlock clearly said everything first..
But.. it is a Sherlock Holmes quote.. he did say it first
“When you have eliminated the impossible, whatever remains, however improbable, must be the truth” is the original quote from the Sherlock Holmes books. Spock is quoting this. When Sherlock said this (in Hounds of the Baskerville), John replied “Okay, Spock”. This tells us two things,
One, that Sherlock has probably seen Star Trek (as has John),
And two, that Sherlock is quoting Spock quoting Sherlock.
There you are.
